《米其林指南》(Le Guide Michelin)是法国知名轮胎制造商米其林公司所出版的美食及旅游指南书籍的总称,其中以评鉴餐厅及旅馆,书皮为红色的「红色指南」(Le Guide Rouge)最具代表性,所以有时《米其林指南》一词特指「红色指南」。除了红皮的食宿指南之外,还有绿色书皮的「绿色指南」(Le Guide Vert),内容为旅游的行程规划、景点推荐、道路导引等等。

米其林星级是有一批经过筛选的“美食密探”进行评判的,他们被称作“监察员”。监察员每去一家餐厅或酒店进行评判,都需要隐瞒身份悄悄潜入住宿和品评。他们需要参考的评分项目包括餐厅的食物(60%)、用餐环境(20%)、服务(10%)和酒的搭配(10%)。一家餐厅的评级,都是由N个“美食密探”品鉴+一年12次的造访+米其林总部评审才能敲定的。

米其林1936年开始采用星级评价,餐厅评分系统共有三个等级:

一颗星指的是在同类饮食风格中表现非常优秀的餐厅(A very good restaurant in its category);
两颗星指的是厨艺非常高明,值得绕道去一趟(Excellent cooking, worth a detour);
三颗星则较难达到,一般指经过米其林多年观察,始终保持最高水平且令人永世难忘的星级餐厅,值得安排单独的行程(Exceptional cuisine, worth a special journey)。
